Gibby's started with a simple idea: good food doesn't have to be fussy or expensive. It just has to be made with love.
Gibby's first started as a café in VIU (Vancouver Island University) in 2018, where owner SandiLea Gibson worked with students of the culinary program. When COVID hit the program was cancelled, and SandiLea pivoted to open her own café, affectionately called Gibby's.
Gibby's is now known in the Cowichan Valley for fresh, homemade food made with love. We keep our menus genuinely affordable because we believe good food is a community thing, not a luxury. And whether you're in for a coffee or a full breakfast, you'll always be served with a smile - and if you're lucky, a story.
